You all – I am a huge fan of candied anything because, you know, my whole sugar addiction thing. And I honestly thought I could never outdo the candied almonds I can buy at the candy store in our mall, but hold on. This recipe for Candied Almonds is unbelievably the most amazing nutty-snack I have ever tasted. Seriously once these babies came out of the oven I couldn’t keep my hands off them, I am sure my husband was jealous…hee hee. But seriously people, they are unreal.

What I love about these Candied Almonds is that used almond slivers. This gave the perfect sugar ratio to each almond and the right amount of crunch. With candied nuts, I am always afraid of the hard outer shell of the candied part and then the nut inside. I don’t need to increase my dental bill any more due to a broken tooth. And too I want my grandma and other guests to enjoy these delicious pieces of heaven.

I was so excited for the kids and hubs to try these when they got home. It was honestly incredibly hard to leave any left for them, seriously though I wanted to eat the entire batch. The kids walked in and their first comment was “did you make coffee cake?” because our house had this amazing cinnamon aroma. It smelled like one of those delicious candles that you can get from Bath & Body Works. I told them I made candied almonds and they were not at all interested. But I made them try it – and these little ravenous beasts wanted to gobble the rest up, but I stopped them in time to leave a good amount for the hubs.

Jake walked in the door and I instantly went over to make him try them, just because I knew how much he would love them. And oh, man he LOVED them. Like I think it is were between these Candied Almonds and Steph Curry going over the ledge, he might rescue the almonds first. GASP! He claimed these to be the best ever – even claiming that if I made more he would eat them every morning as a cereal. He isn’t kidding. And I will do be doing this.

I think this recipe for Candied Almonds will also be our Christmas gift this year to our friends. I can’t wait to put these Candied Almonds on my salads, on a cupcake or muffin, pastry or just making this as an after school treat to gobble up.

So don’t go breaking any teeth trying this year’s holiday nut tray, make these Candied Almonds instead, the key ingredient being almond slivers. Now, friends if you want to use whole almonds go for it, just substitute the almond slivers for whole plain almonds (no salt and not roasted).  Enjoy! XOXO San

How do you candy nuts?

Preheat oven to 275 degrees and line a baking sheet with parchment paper, set aside.

In a medium mixing bowl add white sugar, cinnamon, and sea salt and stir to combine.

In a separate mixing bowl whisk together egg white, vanilla, and water until it becomes foamy.

Add almonds to egg white mixture and toss to combine, making sure to evenly coat all of the almonds.

Add almond slivers into sugar mixture and toss to combine.

Add almonds to prepare baking sheet in a single layer. Place in oven and bake for 15 minutes.

Stir and toss almonds and bake for another 15 minutes.

If your almonds are not yet a nice golden brown colors and need some additional baking time:

Toss and stir almonds and bake another 10-15 minutes, keeping an eye on them making sure not to overcook or burn.

Remove almond slivers from oven and allow to completely cool.

I store mine in large mason jars and this works nicely.

Use for a salad topping, as a cold cereal or even just a great holiday gift.

Ingredients
 

  • 12 ounces almond slivers
  • 3/4 cup sugar
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 1 egg white
  • 1 teaspoon vanilla extract
  • 2 teaspoons water
