As you heard when I made my Coconut Knots, I love pastries – like, an obsessed kind of love. Any morning that starts off with a light, delicate, chocolate-filled pastry is bound to lead to an amazing day. It’s just one of the reasons why my most recent cruise experience was magical.

These Chocolate Raspberry Turnovers are the perfect balance of sweet and tart. I prefer dark chocolate in these Chocolate Raspberry Turnovers, but really, any sort of chocolate would be just as good. The fresh raspberries give it a kick, which makes you feel like you’re eating a freshly made pie. Ready in under 30 minutes, you’ll love how easy these Chocolate Raspberry Turnovers are to make.

This past spring, my daughter, Jordan, and I cruised the Western Caribbean aboard the Ocean Medallion Class Caribbean Princess. It was an unforgettable experience, one we will always cherish. We spent time together laying out on the beach, drinking mocktails in the hot tub (shh, I am not sure we are supposed to do that), and eating until our bellies were full on anything we desired.  To me, that’s pastries, to Jojo, it’s anything with queso or cheese sauce and steak! We were both very satisfied.

Being a food blogger, a person would think that we magically come up with all recipes out of the blue. Maybe for some people that is the case, but for me, I am always inspired by something. Whether it is clean-out-the-fridge night, making up a recipe, or eating incredible pastries in paradise, I love being inspired to come up with simple, easy recipes.

If it were up to Jojo, she’d literally have either steak or chili cheese fries every meal, including breakfast. I am more of a carb fan, so sticking to the International Cafe or the pizza by the slice place is my jam. Let’s not forget the all-you-can-eat soft serve ice cream too!

I always have a master plan to work out on the cruise while I am there, but it’s hard. The pool consistently calls my name, or this time, the exotic excursions we chose kept us engaged. Let’s not even begin to mention all of the amazing drink options! My thought here is to buy a drink package for at least the parents. Kids can have water and survive, but you on the other hand, might want something more. From mocktails to cocktails, the options are endless. I love their Virgin Mojito!

Let me tell you two reasons why this Western Caribbean Cruise was the best so far. One, the new On-Demand Services offered with the Ocean Medallion, and two, the Chef’s Table had the most incredible desserts – my obvious love language.

Being on an Ocean Medallion ship means luxury. One of my biggest draws of the Ocean Medallion was the On-Demand drink and food app. Let me share some of the details.

What are Ocean Medallion On-Demand Services?

Jojo and I could be anywhere on the cruise ship and have our food and drinks brought to us. This usually occurred poolside. This is what our typical order looked like: Coke for Jojo, Diet Coke for me, Chili Cheese Fries for Jojo, Ice cream for me, and pizza for us both.

We both loved watching the progress of our order and seeing when it was out for delivery. The best part of the whole on-demand service was that we didn’t have to wait in line. Yahoo!

What’s a Chef’s table?

The Chef’s Table is designed as a special treat for dining enthusiasts and offers the rare opportunity to be welcomed into the inner sanctum of the ship’s galley to enjoy a full evening of memorable sights, tastes, and conversation hosted by the executive chef. The multi-course menu is specially created by the chef, and is not offered anywhere else on the ship.

The Chef’s Table is always the best foodie experience on every cruise I’ve been able to do it on. Trying combinations and dishes that I wouldn’t even dream of is fun.

Onboard the Princess Caribbean, Jojo was able to participate as well. While she is a little more hesitant trying dishes she has never heard of and some of the ingredients were a little hard, she was a trooper. I honestly think the highlight of the food part of the cruise for her was meeting the chef and having her wear his award-winning medal. Her face says it all.

What are dining options on a Princess cruise?

On a typical meal, however, you can find me at the International Cafe… at least every morning you will. I’m always on the lookout for their Nutella Donuts, which this cruise was on the last day. But I was just happy to get one!!!

This time though, I have to say I was most impressed with the Horizon Cafe. This was updated since I last cruised with Princess to Alaska, but hands down, they have the freshest and widest selection – completely impressive morning, noon, and night.

We mainly ate lunch here because I loved getting a salad, and Jojo had her now-traditional nacho cheese sauce and fries.

But let’s get back to these Chocolate Raspberry Turnovers, inspired by the plate below.

How do you make Chocolate Raspberry Turnovers?

Preheat oven to 400°F.

Mix together egg, water, and vanilla extract – then set aside.

Line baking sheet with parchment paper and set aside.

On floured surface, unfold the pastry sheet and roll out into a rectangle.

Cut each sheet into 3 strips, then cut into 9 squares.

Place 4 fresh raspberries and 1-2 teaspoons of chocolate chunks on half of the square and fold over and pinch dough closed with a fork.

Place on a baking sheet and brush with egg wash. If desired, you can sprinkle with sugar.

Bake for 20 minutes or until golden brown.

Remove from oven and cool, making glaze if desired.

Chocolate Raspberry Turnovers

Ingredients
 

  • 1 box Puff Pastry Sheets comes with 2 sheets
  • 72 fresh raspberries (2 boxes)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 18 teaspoons chocolate chips

Glaze

  • 1 1/2 tablespoons heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon clear vanilla extract or almond extract

Instructions
 

  • Preheat oven to 400°F. Line 2 baking sheets with parchment paper and set aside.
  • Mix together egg, water, and vanilla extract, then set aside.
  • On a floured surface unfold the pastry sheet and roll out into a rectangle. Cut each sheet into 3 strips, then cut into 9 squares.
  • Place 4 fresh raspberries and 1-2 teaspoons of chocolate chunks, on half of the square and fold over and pinch closed with a fork.
  • Place on a baking sheet and brush with egg wash. If you desire, sprinkle tops with sugar.
  • Bake for 20 minutes or until golden brown. Remove from oven and cool. Make glaze if desired while they cool.

Glaze

  • Make the glaze by stirring the cream, powdered sugar, and vanilla together. Once scones have cooled, pour the glaze on top of the scones.
