Afternoon snack time is hard for me. Wait, who am I kidding? All day snacking is hard for me. Being a stay-at-home mom and a food blogger, I am constantly in the kitchen and around food. Whether I am packing lunches, making dinner or whipping up a delicious recipe for the blog, it’s always there. My mind is centered on food – morning, noon and night.

While I really do well most of the day, it is in the afternoon when I start to get the munchies. I try and grab things that will give me energy and not make me feel run down, but I tend to lean towards not-so-good-for-you chips or candy. Chocolate chips are my weakness.

Recently, I decided to take control and try some snacks that would fill that afternoon void while not making me feel weighed down or even more tired. That’s when I made a usual run to Walmart for a few snacks, including my absolute new favorite: Weight Watchers® endorsed Jolly Time Healthy Popcorn. I love having this on its own, but one afternoon, I needed something with a little more kick.

So, I decided to add some fresh herbs and a little olive oil, making this deliciously easy Garlic & Herb Popcorn. It was perfect and kicked my craving. I was satisfied. An added bonus is that my friends who watch their points, Weight Watchers® points that is, have no problem having Jolly Time Healthy Popcorn, as it’s only 3 points per serving. Woohoo!

How do you make Garlic & Herb Popcorn?

Prepare popcorn by popping via the directions on the Jolly Time popcorn box.

In a small skillet heat olive oil and garlic over medium-high heat. Toss garlic to coat in olive oil. While garlic and oil and heating finely chop the fresh rosemary, sage, and thyme and add to the olive oil. Cook over medium-high heat for 1-2 minutes or until very fragrant. Remove from heat and add salt, mix. Add seasoning and oil to the popcorn and toss the popcorn to coat.

An easy way to evenly coat your popcorn is to keep the popcorn in the bag that it pops in, add the oil and roll up the top of the bag to seal and vigorously shake.

Pour popcorn into bowl and serve.

Ingredients
 

  • 1 bag Jolly Time Healthy Pop Crispy White Naturally Flavored
  • 3 large garlic cloves grated
  • 3/4 teaspoon fresh rosemary finely chopped
  • 3/4 teaspoon fresh sage finely chopped
  • 3/4 teaspoon fresh thyme finely chopped
  • 3/4 teaspoon sea salt
  • 3 tablespoons olive oil

Instructions
 

  • Prepare popcorn by popping via the directions on the Jolly Time popcorn box.
