Camping season is finally here. And that means high adventure camps in our family. This year we will break the traditional mold of camping with 5 out of 7 of us will go on backpacking trips through Southern Utah, all guided by my hubby.

I always teased my hubby when we were first married that I still was waiting to see this “manly mountain – adventure-seeking man” he claimed to be while dating. His reply, “that was when I didn’t have kids”. He was right, camping with kids is an adventure. It is not the type of adventure people would pay money for. Baby in a tent, not ideal. Yes, doable, but if you want to function the next day, well maybe sleep in grandma and grandpa’s camper. {Wink.}

But now that our kids are grown, I am seeing this mountain-man side and I love it. Me, on the other hand, I have become a spoiled priss and I hate the thought of a spider crawling on me at night, going pee on my own in the woods in the dark, or to eat a tin-foil dinner from a campfire. WHAT HAS HAPPENED TO ME? I think one too many tropical resort trips is what happened.

Anyway, nonetheless we are ready for some mountain fun. These No-Bake S’mores Bites are a way to kick off a great summer in the woods.
Enjoy these No-Bake S’mores Bites camping, at home or just for a fun snack. You won’t be able to just eat one, trust me I know. XOXO San

How do you make No-Bake S’mores Bites?

Line a baking sheet with parchment paper and set aside.

Crush graham crackers, I did this using a food processor. Once they are crushed into small bits, pour into a medium mixing bowl.

Add marshmallow fluff and melted butter. Stir until it starts to combine, it takes some work. Once it starts to stick together, use the best kitchen utensils ever, your hands, and knead the fluff and crackers together.

Scoop a heaping tablespoon of mixture, I use a cookie dough scooper to make the job easy, pack in the “dough”, then remove from the scooper or tablespoon and place on prepared pan.

Once all of them are scooped, you can roll them into balls which I did for the batch pictured or even leave them as is. If the “dough” is super sticky set in the fridge for 10-15 minutes and let it harden, this will make it easier to roll. Once all of the bites are rolled, place pan in the refrigerator to chill, approximately 10 minutes.

While the bites are chilling, melt chocolate wafers according to package directions. I heat in 30-second intervals until chocolate is completely melted.

Dip the bottom 1/2 of the bite into the melted chocolate, set back on parchment paper to let chocolate harden. Continue with remaining bites.

Once the chocolate has hardened, dip the top 1/2 in the chocolate, gently shaking off extra, then immediately place wet chocolate side up, and sprinkle with additional graham cracker crumbs. Repeat with remaining bites.

Once the bites are dipped and sprinkled, allow chocolate to harden. Then enjoy, they are ready to eat!

  • 3 cups graham crackers crushed, about 2 packages
  • 8 ounces marshmallow fluff
  • 3 tablespoons butter melted
  • 1 cup Ghirardelli’s Dark Melting Wafers
  • 2 graham crackers crushed for topping

  2. these were amazing!!! people at work love them, so did family!
    In my case it did take more that 20 minutes, the “dough” was really really sticky…putting the “dough
    ” in the fridge did help. I think I may have crushed the crackers too much so that then marshmallow fluff absorbed all the crackers. They tasted amazing! Thank you for sharing!!!!!

    1. This recipe got me 24 balls, that are approx. 1″ in diameter (maybe a tiny bit bigger than 1″). I was going for “bite size” 🙂

  3. These were delicious! A couple of tips that worked for me … 1st, I crushed the graham crackers in the food processor and then added the melted butter and fluff right into the food processor. It worked great and the dough was not at all sticky. 2nd, I refrigerated the balls until they were firm and then rolled the whole thing in the melted chocolate (not half and then the other half) – much quicker this way.
