I love churros! Love them. It recently occurred to me that I had never made them. My children had yet to experience this sweet, cinnamon and sugar-coated pastry. A churro, referred to as a Spanish doughnut, is a fried-dough pastry traditionally sprinkled with sugar and served with hot chocolate or café con leche, a Spanish coffee.

I wanted our churro to have some depth and additional flavor, so I thought a pumpkin churro would bring in a wonderful medley of spices including cinnamon, cloves, ginger, and nutmeg. A warm chocolate sauce to dip our pumpkin churro in would round this dish out to be the perfect Sunday afternoon football dessert.

How do you make Pumpkin Churros with Chocolate Dipping Sauce?

Churros
  • Stir together flour, 1 tsp cinnamon, cloves, 1/4 tsp ground ginger, nutmeg, and salt.

  • Bring 1 1/2 cups water, pumpkin puree, butter, and vanilla to a boil in a medium saucepan, whisking constantly.

  • Pour boiling pumpkin mixture into the flour mix and stir until just combined, it will be thick and doughy. Add the eggs one at a time while stirring until combined. It should be thick and smooth with no lumps.

  • Spoon dough in a pastry bag with a large star tip. Heat 2 inches of oil in a deep saute pan to 350° F.

  • Pipe dough directly into heated oil in 3-inch pieces, cutting off with scissors. Fry until golden and crispy, turning halfway, for 4-5 minutes.

  • Stir together sugar and remaining cinnamon in a shallow bowl. Transfer churros to a paper towel-lined sheet pan or plate and immediately toss in the sugar mixture.

Chocolate Dipping Sauce
  • Bring the cream to a simmer in a small saucepan. Put the chocolate chips in a medium bowl. Add the hot cream to the bowl with the chocolate and let sit for 1 minute. Then gently whisk until smooth. Stir in the vanilla extract. Keep warm until ready to use.
  • Serve churros immediately for best flavor with fresh chocolate dipping sauce. Enjoy!

Churros

  • 2 cups all-purpose flour
  • 2 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger plus more for finishing
  • 1/8 teaspoon freshly grated nutmeg
  • 1/8 teaspoon fine sea salt
  • 3/4 cup pure pumpkin puree
  • 10 tablespoons unsalted butter cut into pieces
  • 1/2 teaspoon vanilla extract
  • 4 large eggs room temperature
  • vegetable or canola oil for frying
  • 3/4 cup granulated sugar for rolling

Chocolate Dipping Sauce

  • 1 cup heavy cream
  • 8 ounces bittersweet chocolate chips
  • 1/4 teaspoon pure vanilla extract

Kids review: Sad to say but this was the first time they had ever had churros! They loved them. Of course, the boys had several comments about what they look like, you know exactly where their minds went. This has already been requested to be a regular for Sunday night football.
