Carrot Cake Whoopie Pies

⋆ Ingredients ⋆

Carrot Cake Cookies – 1 box carrot cake mix – 2 eggs – 1/2 cup canola oil Cream Cheese Frosting – 1/2 cup butter softened – 8 ounces cream cheese – 4 cups powdered sugar – 1 tablespoon milk

⋆ Step 1 ⋆

Mix together cake mix, oil, and eggs in a large bowl until well combined.

⋆ Step 2 ⋆

Scoop dough by the tablespoon onto a parchment lined baking sheet. Bake at 350° for 10-12 minutes.

⋆ Step 3 ⋆

Make frosting by beating together the butter and cream cheese. On low speed, add the powdered sugar a cup at a time until smooth and creamy. 

⋆ Step 4 ⋆

Spoon into a piping bag and pipe onto the flat side of one cooled cookie, then top with another, flat side to the frosting.

⋆ Step 5 ⋆

Store in a sealed container at room temperature for up to 3 days, or  in the fridge for up to a week. Serve once frosting is set and enjoy!
