How to Make Crock Pot Chicken Tortilla Soup

– butter – yellow onion – bell peppers – garlic – salt – chicken – chicken broth – enchilada sauce – cumin – chili powder – oregano – taco seasoning – half & half – pinto beans – corn
Step 1: Melt butter in a saute pan. Season peppers, onion, and garlic with 1 teaspoon of salt and sauté until they are tender. Add to the slow cooker.
Step 2: Place the chicken breasts in the crockpot. Then add seasonings, broth, and enchilada sauce. Cook on high for 3-4 hours.
Shred chicken and add to soup with beans, corn, and heavy cream mixed with flour. Cook on high for another hour or until thickened.
Serve with your choice of garnishes such as fresh chopped cilantro, sour cream, and tortilla strips. Enjoy!
