Creamy Sausage Pasta

⋆ Ingredients ⋆

– penne pasta – olive oil – Italian sausage – diced yellow onion – sweet corn kernels – kosher salt – mascarpone – Sambal chili paste – parmesan cheese – fresh basil – reserved pasta water

⋆ Step 1 ⋆

Heat olive oil in a skillet. Cook sausage until fully browned, crumbling as it cooks.

⋆ Step 2 ⋆

Add the diced onion and cook until translucent. 

⋆ Step 3 ⋆

Stir in salt to taste and the corn kernels. Cook until the corn is heated through.

⋆ Step 4 ⋆

Add al dente penne pasta while it's still hot. Be sure to reserve the pasta water for later.

⋆ Step 5 ⋆

Add chili paste, mascarpone, and reserved pasta water and toss to combine.

⋆ Step 6 ⋆

Stir in freshly grated parmesan and stir until the sauce is combined and creamy.

⋆ Step 7 ⋆

Add fresh basil and toss once more to combine. Serve while hot and enjoy!
