Crock-Pot  Curry Chicken

⋆ Ingredients ⋆

– chicken thighs – red onion – red bell pepper – minced ginger – minced garlic – coconut milk – chicken stock – peanut butter – brown sugar – red curry paste – fish sauce – lime juice – red pepper flakes – chopped cilantro – coarsely chopped peanuts

⋆ Step 1 ⋆

Add all the ingredients (except garnishes and chicken) to the crockpot and stir.

⋆ Step 2 ⋆

Place the chicken thighs in a single layer in the sauce. Cook on high 3-4 hours or on low for 5-6 hours, until chicken is cooked through.

⋆ Step 3 ⋆

Remove chicken from crockpot and chop, then add back to the crockpot.

⋆ Step 4 ⋆

For a thicker curry, whisk 1 tbsp cornstarch into the sauce and cook until it reaches your desired consistency.

⋆ Step 5 ⋆

Top with cilantro and peanuts if desired. Serve with rice and naan for a delicious meal!
