How to Make 30 Minute Thai Chicken Soup

– Oil – Chicken tenderloins – Red onion – Red bell pepper – Red curry paste – Ginger – Chicken broth – Fish sauce – Coconut milk – Peanut butter – Snow peas – Lime juice – Rice noodles

Step 1: Add oil to a large skillet over med-high heat. Cook chicken for 2-3 minutes. Flip and cook on the other side. Repeat until they are cooked all the way through. Remove from skillet.

Step 2: Add more oil and cook onion for 2 minutes, then add the pepper for 2 more minutes. Add curry paste and ginger, chicken broth, and coconut milk. Stir together. Then stir in peanut butter.

Step 3: Reduce heat to medium-low and add in snow peas. Cover and cook over for 10 minutes. After 10 minutes, remove the lid and reduce heat to low. Add in the shredded chicken. Cook for 5 minutes.

Step 4: Serve with cooked rice noodles and garnish with cilantro and lime juice if desired. Enjoy!
