How to Make Oatmeal Sandwich Cookies

– Brown sugar – Shortening – Large egg – Vanilla extract – Salt – Baking powder – Baking soda – Flour – Rolled oats – Powdered sugar – Marshmallow fluff – Heavy cream

Step 1: Cream together sugar, brown sugar, and shortening. Add eggs and vanilla extract. Combine oats, flour, baking soda, baking powder, salt, and cinnamon and add to the mixer.

Step 2: Scoop rounded tablespoons of the dough onto a baking sheet. Bake the cookies at 350°F for 8-10 minutes or until light golden brown.

Step 3: Cream together the shortening, powdered sugar, and vanilla until smooth. Then fold in the marshmallow fluff. Add heavy cream as needed until it reaches a whipped consistency.

Step 4: Pipe or spoon frosting onto the bottom of one cookie, then top with another, bottom side down.
