How to Make Zucchini Chocolate Chip Muffins

– Flour – White Sugar – Baking Soda – Freshly grated zucchini – Salt – Vanilla extract – Cinnamon – Canola oil – Chocolate Chips – Buttermilk – Walnuts, optional

Step 1: In a large mixing bowl, combine the flour, sugar, baking soda, cinnamon, and salt. In a separate mixing dish, whisk together the egg, oil, milk, lemon juice, and vanilla extract. Combine the wet and dry ingredients until combined only. Fold in the zucchini and chocolate chips.

Step 2: Fill prepared muffin cups 2/3 full with batter. Bake the muffins at 350°F until a toothpick inserted into the center of one comes out clean, about 20 to 25 minutes.

Step 3: Enjoy! Keep any uneaten muffins in an air-tight Tupperware on the counter or, if you prefer them cold, in the fridge. They’ll stay fresh for 3 to 4 days.
