Lemon Lime  Layer Cake

⋆ Ingredients ⋆

– unsalted butter – all-purpose flour – baking powder – baking soda – salt – lemon zest – sugar – eggs  – egg yolks – lemon juice – low-fat buttermilk – confectioner's sugar – lime juice – lime zest – butter – milk

⋆ Step 1 ⋆

In a bowl, whisk together flour, baking powder, baking soda, salt, and lemon zest.

⋆ Step 2 ⋆

Cream together butter and 1 1/2 cups sugar with a mixer until light and fluffy. Reduce speed to low and add in eggs and yolks, one at a time. Mix in lemon juice.

⋆ Step 3 ⋆

Alternate adding flour mixture and buttermilk to the wet ingredients until well combined. Separate equally into 2 greased 8-inch cake pans. Bake at 350° for 30-35 minutes.

⋆ Step 4 ⋆

In a large bowl, cream together the confectioners' sugar and butter until smooth. Gradually mix in the milk, lime zest and juice with an electric mixer until smooth and stiff, about 5 minutes.

⋆ Step 6 ⋆

Evenly spread the filling on top of the bottom layer, then add the second cake on top. Frost and garnish with zest if desired. Enjoy!
