Thai Curry  Red Pepper Soup

⋆ Ingredients ⋆

– 6 diced red bell peppers – 2 diced shallots – 1/4 cup olive oil – 2 cups coconut milk – 4 cups vegetable broth – 2 T. red curry paste – salt & pepper to taste – cooked quinoa – 1 cup chopped fresh cilantro – coconut yogurt

⋆ Step 1 ⋆

Sauté diced peppers and shallot in olive oil in a large pot until tender, about 8-10 minutes on medium heat

⋆ Step 2 ⋆

Place peppers, shallot, broth, coconut milk, and curry paste in a blender and blend on high until completely smooth.

⋆ Step 3 ⋆

Pour back into the pot and simmer for 8-10 minutes over medium. Add salt and pepper to taste.

⋆ Step 4 ⋆

Serve with cooked quinoa, chopped cilantro for garnish and coconut yogurt or cream if desired. Enjoy!
