This “BLT” Kale Salad has large chunks of bacon, kale, & roasted tomatoes with a lemon garlic dressing. This salad takes the term BLT to a whole new level.

Ingredients
7cupsrainbow kale
1lb.thick cut baconcooked and crumbled into large chunks
1cuproasted tomatoes
Optional Toppings:
Italian Herb Biscuitsserve on the side or chop up for croutons
Parmesan Cheese
Lemon Garlic Dressing
1/3cuplemon juice
2tablespoongarlic oil
2garlic clovesfinely diced
1tablespoonolive oil
1tablespoondiced shallots
1tablespoonhoney
salt to taste
Instructions
Make the vinaigrette by mixing together lemon juice, garlic oil, olive oil, honey, garlic, shallots, and salt in a small mason jar or bowl. Set in the fridge to chill until ready to serve.
Prepare kale by roughly chopping.
To take some of the bitterness from the kale, gently squeeze the kale once you have chopped it.
Add kale to a large serving bowl, top with chopped roasted tomatoes, and bacon. Drizzle with 3/4 of the dressing from the jar and gently toss.
Serve immediately with additional dressing if desired, Italian Herb Biscuits, and freshly grated Parmesan cheese.
This salad is also great prepared an hour in advance, let it chill in fridge until ready to serve. Enjoy!
