This Homemade Angel Hair Pasta with Brown Butter Sage Sauce is an amazingly delicious, simple homemade recipe that the whole family will love.

Ingredients

Pasta

  • 6 whole Eggs
  • 3 cups all-purpose Flour

Sauce

  • 4 tablespoons butter
  • 8 sage leaves chopped
  • 1/2 lemon juiced
  • 1/4 cup grated Parmigiano-Reggiano

Instructions

Pasta

  • Add flour to a large mixing bowl and make a well in the center. Crack eggs into the center of the well. Mix together with your hands.
  • Once well-combined, turn the dough out onto a floured surface and knead. You can do this however you like, roll, punch, or push down by hand until it is smooth and pliable, adding flour to the board if necessary.
  • Let the dough rest for at least 10 minutes before rolling it out.
  • Divide dough into 4 balls, this makes it easier to roll out.
  • If using a pasta machine, roll the ball into a 1/2 inch thick sheet. Roll it through the press following the machine directions until it reaches your desired thickness. Set aside for 10 minutes on a floured surface.
  • If rolling it out by hand, set on a floured surface and use a rolling pin until its as thin as it will go without tearing. Let it sit for 10 minutes, this will make it easier to cut.
  • Using a pizza cutter or a very sharp knife, cut into very thin slices.
  • I let my pasta sit and dry out all day, I make the noodles in the morning and then cook them right before dinner. You can do this or cook the noodles right away.
  • To cook the noodles, boil them in salted water (very important!) for around two minutes. If you have let the noodles sit all day this make take a minute longer, check at 2 minutes. They cook really fast, so don’t let them go too long.

Sauce

  • While the pasta cooks, melt butter in a saute pan and stir until it foams up and turns a golden brown color. Add sage leaves and remove from heat. Stir in lemon juice and set aside.
  • Drain the pasta, setting aside a small amount of cooking water. Pour pasta and water into the sauce and return to heat. Add the cheese, toss to coat, and serve immediately. Enjoy!

Notes

Note: For more pasta, the key is to use 2 eggs per 1 cup of flour.
The prep time includes 10 minutes for letting pasta dough sit.
