Candied Almonds

With the perfect amount of crunch these cinnamon & vanilla Candied Almonds make a great topper or snack. Roasted to perfection, they even make a great gift.

Ingredients

  • 12 ounces almond slivers
  • 3/4 cup sugar
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 1 egg white
  • 1 teaspoon vanilla extract
  • 2 teaspoons water

Instructions

  • Preheat oven to 275 degrees and line a baking sheet with parchment paper, set aside.
  • In a medium mixing bowl add white sugar, cinnamon and sea salt and stir to combine. 
  • In a separate mixing bowl whisk together egg white, vanilla and water until it becomes foamy.
  • Add almonds to egg white mixture and toss to combine, making sure to evenly coat all of the almonds.
  • Add almond slivers into sugar mixture and toss to combine.
  • Add almonds to prepare baking sheet in a single layer. Place in oven and bake for 15 minutes.
  • Stir and toss almonds and bake for another 15 minutes.
  • If your almonds are not yet a nice golden brown colors and needs some additional baking time. Toss and stir almonds and bake another 10-15 minutes, keeping an eye on them making sure not to overcook or burn.
  • Remove almond slivers from oven and allow to completely cool. 
  • I store mine in a large mason jars and this works nicely.
  • Use for a salad topping, as a cold cereal or even just a great holiday gift.
