Colorado Breakfast Hash - flavorful, vibrant and easy, this super simple meal won’t be made just for breakfast but for lunch and dinner as well.

Ingredients

  • 1 package Alexia Crispy Rosemary Fries with Sea Salt
  • 1/2 red bell pepper diced
  • 1/2 green bell pepper diced
  • 1/2 red onion diced
  • 6 eggs prepared to taste
  • 2 cups cheddar cheese shredded
  • 1 recipe Colorado Chile Sauce
  • 3 green onions chopped
  • 1/3 cup cilantro chopped

Colorado Chile Sauce

  • 1 cup tomato sauce
  • 2 cups chicken broth
  • 8 dried chiles
  • 1 1/2 teaspoons oregano
  • 1/3 cup diced green chiles
  • 1 teaspoon cumin
  • 1/2 teasoon coriander
  • 2 garlic cloves
  • 1 1/2 teaspoons salt

Instructions

  • Make Colorado Chile Sauce.
    Follow directions here.
  • Preheat oven to 425 degrees.
  • Prepare hash by adding Alexia fries to a large cooking/baking sheet. Top with diced red and green bell peppers and onion.
  • Place in oven and bake for 25 minutes.
  • Remove pan from oven and change oven setting to low broil. Top potatoes with eggs, I prepared our eggs as sunny side up, my kids prefer scrambled. Then top eggs with cheese, place back in oven under low broil and cook until cheese has melted.
  • Remove pan from oven and top with green onions, cilantro and Colorado Chile Sauce.
    Serve immediately and devour!
