Ingredients
2 lbssmall red potatoes
1/4cup Pure Blends Avocado Oil or Coconut Oil Plant-Based buttermelted
2teaspoonskosher salt
3/4 teaspoonblack pepper
2 tablespoons minced garlic
2tablespoons fresh rosemaryfinely chopped
Instructions
Preheat the oven to 400 degrees F.Cut the potatoes in quarters (or halves if very small) and place in a bowl with the melted spread, salt, pepper, garlic, and rosemary; toss until the potatoes are well coated.
Spread out the potatoes on a baking sheet in a single layer, 45 minutes to 1 hour, or until browned and crisp. Flip twice with a spatula during cooking to ensure each side is a nice golden brown.
Remove the potatoes from the oven, season to taste, and serve.
