Slow Cooker Southwestern Barbecue Chicken is a tangy, spicy southwestern flare on your typical slow cooker barbecue chicken.

- 18 ounces barbecue sauce your choice
- 1 cup salsa any kind
- 1/2 green pepper diced
- 1/2 red pepper diced
- 1/2 medium purple onion diced
- 1 cup frozen corn
- 3 large boneless skinless chicken breasts
- salt and pepper
- 14.5 ounce can black beans rinsed and drained
In a slow cooker add barbecue sauce, salsa, green & red pepper, onion, and corn. Stir to mix together. Season the chicken breast with salt and pepper.
On top of the sauce, add the chicken breast.
Place the lid on top of the slow cooker and turn on high for 3-4 hours or low for 6-8 hours.
Once completely cooked, shred the chicken, return to slow cooker, and add black beans. Place on lid and cook for another 20-30 minutes.
Remove chicken from the slow cooker and make as a sandwich, taco, or use as a salad topping.
Great meal to freeze for later and makes fantastic leftovers. Enjoy
