Slow Cooker Southwestern Barbecue Chicken is a tangy, spicy southwestern flare on your typical slow cooker barbecue chicken.

Ingredients

  • 18 ounces barbecue sauce your choice
  • 1 cup salsa any kind
  • 1/2 green pepper diced
  • 1/2 red pepper diced
  • 1/2 medium purple onion diced
  • 1 cup frozen corn
  • 3 large boneless skinless chicken breasts
  • salt and pepper
  • 14.5 ounce can black beans rinsed and drained

Instructions

  • In a slow cooker add barbecue sauce, salsa, green & red pepper, onion, and corn. Stir to mix together. Season the chicken breast with salt and pepper.
  • On top of the sauce, add the chicken breast.
  • Place the lid on top of the slow cooker and turn on high for 3-4 hours or low for 6-8 hours.
  • Once completely cooked, shred the chicken, return to slow cooker, and add black beans. Place on lid and cook for another 20-30 minutes.
  • Remove chicken from the slow cooker and make as a sandwich, taco, or use as a salad topping.
  • Great meal to freeze for later and makes fantastic leftovers. Enjoy
