Thin Mint Ice Cream Cupcakes
These delicious Thin Mint Ice Cream Cupcakes are an easy dessert that you can have all year long, not just when the Girl Scouts come knocking at your door.
Pillsbury Girl Scouts® Thin Mints® Cupcakes
- 1 Pillsbury Girl Scouts® Thin Mints® Cupcake Mix
- 4 tablespoons butter softened
- 1/3 cup milk
- 2 eggs
- ganache mix included in Pillsbury Girl Scouts® Thin Mints® Cupcake Mix
- 2 tablespoons milk
- 1 tablespoon butter
- Mint Chocolate Chip Ice Cream
Prepare Girl Scouts® Thin Mints® Cupcake Mix according to package directions.
Bake cupcakes and let them completely cool on a baking rack.
Once the cupcakes are completely cool.
Cut the tops off the cupcakes like pictured.
Using a small spoon remove the center of the cupcake.
Add a small scoop of ice cream. I used a cookie dough scooper to get the perfect amount.
Prepare chocolate ganache according to package directions.
Dip the tops into the ganache and immediately place the top back onto the cupcake with the ganache facing up.
Repeat with remaining cupcakes and then place in freezer until ready to serve, about 30-45 minutes.
