Ingredients

  • 2 pounds chicken breasts
  • 2/3 cup Greek dressing
  • 3/4 tablespoon granulated garlic
  • 1 oz package dry ranch dressing mix
  • 1/2 cup water
  • 6 ounces feta cheese
  • 1 1/2 cups cherry tomatoes cut in half
  • 10-18 small or large tortillas

Toppings

  • feta cheese
  • tomatoes
  • kalmata olives optional
  • chopped lettuce
  • Greek dip

Instructions

  • Spray the inside of your slow cooker with cooking oil.
  • Add chicken, Greek dressing, water, garlic, and ranch packet and toss to combine.
  • Cook on low for 4-6 hours or on high 3-4 hours.
  • Remove chicken and shred. Place chicken back in the sauce, add tomatoes and feta cheese and mix together.
  • Place about 1/4 cup of the chicken mixture onto the middle of each tortilla. Top with 1 tablespoon feta cheese, 4 tomatoes halves and kalamata olives if desired. Roll tightly and place in a single layer on a greased baking sheet. Bake 10 minutes, until tortillas are slightly browned.
  • Or you can add 1 tablespoon of cooking oil to a large skillet and heat over medium high heat. Add rolled taquitos and cook on each side until the taquitos is a light golden brown. I typically will "flash fry" 3 at a time.
  • Serve with desired toppings and Greek dip. Enjoy!
