Mint Chocolate Chip Avocado Ice Cream
This Mint Chocolate Chip Avocado Ice Cream is an easy & healthy way to devour a summer treat. Enjoy this with friends & family at your next barbecue.
- 3 avocados ripe
- 1 banana ripe
- 2 tbsp unrefined coconut oil
- 1 1/2 tsp mint extract
- 1/4 cup maple syrup
- 1/2 cup milk
- 1/3 -1/2 cup bittersweet chocolate chips
Add the avocados, banana, coconut oil, extract, maple syrup, and milk into your Blendtec Blender or other food processor/blender. Process in your blender until smooth. I would suggest if using a Blendtec to use the ice cream setting, it works great!
Stir in the chocolate chips and pour into a serving dish, cover and set in the freezer. Stir every hour or so for the first 3-4 hours while it is in the freezer, to avoid chunks of ice forming.
The ice cream will be ready between 4-6 hours depending on your freezer. Enjoy!
