- 4 tablespoons unsalted butter
- 3-4 large boneless chicken breasts cut into 1-inch pieces
- 1 cup sweet chili sauce
- 4 tablespoons reduced sodium soy sauce
- 5 cloves garlic minced
- 2 tablespoons fish sauce
- 2 tablespoons freshly grated ginger
- 1-2 teaspoons Sriracha to taste
- juice of 2 limes
- serve with rice
- 3-4 tablespoons chopped peanuts optional
In a large sauté pan add butter over medium-high heat and cook almost completely melted then add chicken. Cook chicken until it is a nice golden brown and cooked through the center. This takes about 8 minutes.
NOTE: if you pan is too small for the amount of chicken and your pan is overcrowded, cook the chicken in two separate batches.
Once chicken is completely cooked, place chicken on a large plate and set aside for later.
In the large pan you were just using add all of the remaining ingredients and whisk to combine. Cook over medium heat until boiling.
Once the sauce is boiling add the chicken, reduce heat to low and cook for 3 minutes allowing the sauce to glaze and cover all of the chicken pieces. Add broccoli pieces and cover and cook for another 3-5 minutes or until broccoli is slightly tender.
Remove lid and serve chicken immediately over rice or rice noodles.
