4tablespoonsunsalted butter
3-4large boneless chicken breastscut into 1-inch pieces
NOTE: if you pan is too small for the amount of chicken and your pan is overcrowded, cook the chicken in two separate batches.
Once chicken is completely cooked, place chicken on a large plate and set aside for later.
In the large pan you were just using add all of the remaining ingredients and whisk to combine. Cook over medium heat until boiling.
Once the sauce is boiling add the chicken, reduce heat to low and cook for 3 minutes allowing the sauce to glaze and cover all of the chicken pieces. Add broccoli pieces and cover and cook for another 3-5 minutes or until broccoli is slightly tender.
Remove lid and serve chicken immediately over rice or rice noodles.
