Ingredients

  • 1 lb. ground beef
  • salt and pepper to taste
  • 15 ounce can enchilada sauce
  • 1 cup sour cream
  • 4 ounce can green chiles
  • 15 ounce can black beans rinsed and drained
  • 4 ounces cream cheese softened or 1 can cream of chicken
  • 1/2 teaspoon cumin
  • 1 teaspoon chili powder
  • 9.75 ounce Fritos chips
  • 2 cup shredded cheese plus 1/2 cup for topping

  • 1/2 head of lettuce chopped
  • 1 roma tomato chopped
  • guacamole
  • sour cream
  • red onion
  • salsa

Instructions

  • Pre heat oven to 350 degrees.
  • In a medium skillet add ground beef, season with salt and pepper, cook until the beef is completely cooked through, about 5-7 minutes. Remove from heat, drain grease and set aside.
  • In a medium bowl mix together enchilada sauce, green chiles, black beans, sour cream, cream cheese or cream of chicken, cumin, chili powder, 2 cups shredded cheese, and beef. Stir together until well combined.
  • In a 1 quart casserole dish, pour Frito chips in the bottom, add beef mixture on top of the chips, and then sprinkle remaining cheese on top. Bake uncovered for 20-25 minutes or until warm and bubbly and cheese is melted on top.
  • Serve immediately topped with lettuce and chopped tomatoes. Some additional fantastic toppings include: guacamole, sour cream, red onion, and salsa.
