Bourbon Chicken

Bourbon Chicken is my favorite easy dinnertime meal. Served with rice, green onions, and lots of sauce, this meal is delicious and ready in just 30 minutes.

Ingredients

  • 2 pounds boneless chicken breasts cut into bite-size pieces
  • 2 tablespoons olive oil
  • 2 garlic cloves crushed & chopped
  • 1/4 teaspoon ginger
  • 3/4 teaspoon crushed red pepper flakes
  • 1/4 cup apple juice
  • 1/3 cup light brown sugar
  • 2 tablespoons ketchup
  • 1 tablespoon cider vinegar
  • 1/2 cup water
  • 1/3 cup soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon Sriracha sauce optional to kick up the heat
  • salt to taste

Instructions

  • Heat a large skillet heat oil over medium-high heat. Add chicken and lightly season with salt, to your taste. Turn and cook for 5 minutes or until chicken is cooked on all sides. Remove chicken from the skillet.
  • Add the remaining ingredients: garlic, ginger, red pepper flakes, apple juice, apple cider vinegar, brown sugar, water, ketchup, soy sauce, and cornstarch. Stir together over the heat until it is well combined and cornstarch and sugar have dissolved. 
  • Add the chicken back in and bring to a rolling boil. Reduce heat to low to medium-low and simmer, uncovered for 20 minutes.
  • Serve over hot rice. Enjoy!
  • Recipe Note we like a lot of sauce, so I will double the sauce ingredients so that my kids can drench their rice in the sauce.
