Chipotle Fries

These cheesy Chipotle Fries are made with only a few simple ingredients. This is a tasty twist on classic fries that the entire family will love.

Ingredients

  • 1 teaspoon olive oil
  • ½ cup diced red onion
  • 1 diced garlic clove
  • ½ cup chipotle sauce
  • 12 ounce bag Alexia Smart Classics Roasted Straight Cut Fries
  • salt to taste
  • 2 cups Monterrey Jack cheese optional

Cilantro Gremolata

  • 1 cup cilantro leaves minced
  • 1 clove garlic
  • 1 lime zested and juiced

Instructions

  • Finely mince cilantro and garlic. Place cilantro, garlic and zest and juice from one lime in a bowl and toss together, set aside.
  • Heat oven to 450 degrees.
  • In a large skillet over medium heat, heat olive oil. Add onions and garlic and let cook for 3-4 minutes until onions and garlic begin to soften. Next, add in the chipotle sauce and stir to combine. Once hot, turn off heat and add fries. Toss to coat.
  • Add coated fries to a large baking sheet, making sure to lay in a single layer. Bake at 450 for 30 minutes, turning fries half way through cooking time.
  • Add ½ of the gremolata to the top of the fries & 2 cups of Monterrey Jack cheese. Place back in oven for 3-5 minutes or until cheese has melted. Remove from oven top with the remaining gremolata & sprinkle additional chipotle sauce if desired. Or serve some additional chipotle sauce on the side as a dipping sauce for those who want some additional heat. Serve immediately & devour.
