4ouncesno boil lasagna noodles
1poundItalian sausage
2garlic clovesfinely chopped
14.5ouncesdiced tomatoes
32ouncesspaghetti saucewe love Rao's
1teaspoonItalian seasoningseason to taste
2cupslow-fat ricotta cheese
2eggs
4 ouncescream of onion soupI used Campbell's
1 1/2ouncesmozzarella cheesethinly sliced
1tablespoonsfreshly chopped basil
Instructions
In a large saucepan, brown the Italian sausage and garlic over medium-high heat until the meat is no longer pink, breaking it up while cooking.
Next, add the tomatoes and spaghetti sauce to the pan, and stir until combined. Heat all the way through until hot, then pour it into a large mixing bowl or measuring cup. Set aside.
In a small bowl, combine the soup, eggs, cottage cheese and Italian seasoning.
Return 1-1/2 cups meat sauce to the pan; spread evenly over the surface. Layer one cup of the ricotta mixture and spread over the sauce.
Top with 1 1/2 cups meat sauce, then place 1/2 of the noodles on top of the last layer of sauce, breaking to fit.
Repeat layers of ricotta cheese mixture, meat sauce and noodles. Top with remaining meat sauce. Bring to a boil. Then reduce heat to a simmer or low; cover and simmer for 15-17 minutes or until noodles are tender.
Remove from the heat. Sprinkle with shredded cheese; cover and let stand for 3-4 minutes or until cheese is melted. Top with freshly chopped basil or parsley.
