Buffalo Chicken Fries
Buffalo Chicken Fries are like a buffalo chicken wing, but in a single bite- gooey cheese, chicken, buffalo sauce, topped with blue cheese and green onions.
Servings: 6 -8
- 15 ounce bag Alexia Sweet Potato Fries
- 1 bunch green onions diced
- 1 cup diced chicken I used rotisserie chicken
- 1/2 cup buffalo wing sauce I used mild
- 1/2 cup blue cheese crumbles
- 1 1/4 cup Monterey Jack cheese

Preheat oven to 425 degrees. Arrange fries on a large baking sheet.
In a small bowl, add 1/4 cup of buffalo wing sauce to the diced chicken and mix together.
Bake fries according to package directions.
Remove from oven, but leave the oven on. Top with Monterey Jack cheese, buffalo chicken, and drizzle remaining buffalo sauce over the fries. Sprinkle on blue cheese.
Place back in the oven and bake until all the cheese has melted, 5-7 minutes.
Remove from oven and top with green onions. Change oven to low broil, and place pan in oven for 3 minutes. Remove pan from oven and place on a serving platter and serve. Have additional sauce and blue cheese on the side.
