  • 1/2 bunch purple kale
  • 2 handfuls fresh spinach
  • 1 red pepper diced
  • 1/2 cup freshly grated parmesan cheese
  • 2 cups cooked chicken diced or shredded

Instructions

  • To make this recipe easy, pick up a rotisserie chicken from your local super market and chop.
  • Coarsely chop both kinds of kale add into a large salad bowl. Gently tenderize the kale by squeezing with hands, 5-6 times. Add spinach to the kale, set aside.
  • Roast red peppers by placing on a baking sheet and top with a drizzle of olive oil over the pepper. Place in the oven on high broil and broil 3 minutes, stir the peppers and broil for another 3-5 minutes.
  • Remove from oven and set aside for a few minutes to cool.
  • Add the roasted peppers to the salad. I add them when they are still warm but not hot. Add in cheese, season with pepper.
  • Add 1/4 cups of Easy Caesar Dressing and mix together. Top with chicken and Italian Herb Biscuits. Serve with additional dressing on the side so each person can have it to their taste.
