French Onion Meatball Sandwich

These French Onion Meatball Sandwiches are a cheesy onion-filled sandwich with meatballs. A delicious twist on French Onion Soup, a favorite classic.

Ingredients

  • 1 pound hamburger meat
  • 2/3 cup bread crumbs
  • 1 egg whisked
  • salt & pepper to taste
  • 1 Sweet Onion Campbell’s Soups for Easy Cooking
  • 2 medium yellow onions thinly sliced
  • 4 tablespoons butter divided
  • 18 slices Swiss or Gruyere cheese thinly sliced is best
  • 6 Ciabatta Rolls

Instructions

  • In a medium mixing bowl add in hamburger, bread crumbs and whisked egg. Season with salt and pepper to taste. Mix together using your hands until it is all well combined and you can no longer see any egg.
  • Preheat oven to 350 degrees.
  • Using a cookie dough scooper, scoop hamburger mixture, remove from the scooper and roll into a smooth ball. I do this so that I am sure to get 18 meatballs and that they are even, makes for easier cooking.
  • Place the meatballs an inch apart in a two quart baking dish, then pour oven the carton of Sweet Onion soup. It is a little thick, so use a spoon to pour it evenly over the meatballs.
  • Place in oven and bake for 25 minutes at 350 degrees.
  • In a medium sauté pan, melt 2 Tbsp butter then add onion slices. Cook over medium-high heat until onions start to caramelize, about 7-10 minutes. Stir frequently to make sure not to burn.
  • Once onions are cooked remove from heat and set aside.
  • Slice Ciabatta rolls in half, spread the remaining butter on each side of the rolls. Place butter side up on a cookie sheet.
  • Once meatballs are cooked, remove from oven and set aside. Turn oven to low broil and set the rolls in the oven for 3-5 minutes, until the butter melts and bread turns a golden brown.
  • Remove rolls from oven but leave the oven on low broil.
  • Place 3 meatballs on the bottom part of each roll, top with generously with onions, top with 3 slices of cheese. Repeats with remaining meatballs, onions, bread and cheese.
  • Place the rolls with the meatballs on them back in the oven on low broil. Broil until the cheese melts and is golden and bubbly.
  • Remove from oven, top with other half of bread and serve.
  • These also make a great picnic sandwich. We will be taking these to baseball games all summer.
