This Cinnamon Chip Coffee Cake is a classic delicious coffee cake with a cinnamon chip crumb topping. It makes a great morning treat or an afternoon snack.

Ingredients

Coffee Cake

  • 1 yellow cake mix just use the mix, don’t follow the directions on the back!
  • 4 eggs
  • 3/4 cup canola or vegetable oil
  • 3/4 water
  • 1/2 cup instant vanilla pudding
  • 1 teaspoon vanilla
  • 1 cup mini-cinnamon chips I buy Hershey’s

Topping

  • 1 cup brown sugar
  • 1 tablespoon cinnamon
  • 1/2 cup mini-cinnamon chips

Instructions

  • Preheat oven to 350 and grease 9x13 metal pan.
  • Mix all the ingredients for the cake, except the cinnamon chips, in a mixer for 7 minutes. I love to use my Kitchen Aid mixer for this!
  • Meanwhile, mix together brown sugar and cinnamon in a small bowl.
  • Stir in the cinnamon chips and pour batter in the greased 9x13 metal pan. Sprinkle brown sugar mix over the cake and top with 1/2 cup cinnamon chips.
  • Place in oven and bake 25-35 minutes or until the cake is set and is pulling away from the edges. Let it completely cool so it doesn’t crumble when you cut it.
  • Serve and enjoy!
