Coffee Cake
1yellow cake mixjust use the mix, don’t follow the directions on the back!
4eggs
3/4cupcanola or vegetable oil
3/4water
1/2cupinstant vanilla pudding
1teaspoonvanilla
1cupmini-cinnamon chipsI buy Hershey’s
Topping
1cupbrown sugar
1tablespooncinnamon
1/2cupmini-cinnamon chips
Instructions
Preheat oven to 350 and grease 9x13 metal pan.
Mix all the ingredients for the cake, except the cinnamon chips, in a mixer for 7 minutes. I love to use my Kitchen Aid mixer for this!
Meanwhile, mix together brown sugar and cinnamon in a small bowl.
Stir in the cinnamon chips and pour batter in the greased 9x13 metal pan. Sprinkle brown sugar mix over the cake and top with 1/2 cup cinnamon chips.
Place in oven and bake 25-35 minutes or until the cake is set and is pulling away from the edges. Let it completely cool so it doesn’t crumble when you cut it.
