Oreo Monster Cookie Sandwiches

These Oreo Spider Cookie Sandwiches will be a frightfully fantastic easy to assemble treat to make this Halloween. They are a Halloween must have!

Ingredients

  • 36 Oreos
  • 3 cups dark melting wafers I used Ghirardelli
  • 108 candy eyes
  • 2 containers chocolate sprinkles
  • 12 Twizzlers black licorice

Buttercream Icing

  • 1 cup butter softened
  • 1 teaspoon clear vanilla extract
  • 4 vanilla beans seeds removed and bean discarded
  • 4 cups confectioner's sugar
  • 2 tablespoons milk
  • green food coloring amount you desire for the color you want.

Instructions

  • Lay out a long piece of wax paper on the counter.
  • Melt chocolate according to package directions, pour into a medium sized mixing bowl.
  • Holding the bottom part of the Oreo dip the top half into the melted dark chocolate making sure to cover most of the sides of the Oreo. Set melted chocolate side up on the wax paper, sprinkle immediately with chocolate sprinkles. Repeat with remaining Oreos.
  • Pick up one eyeball and add a small dot of chocolate onto the back using the tip of a small spoon. Set on Oreo where you want the eye to be, make sure that it is on the side of the Oreo. Add 2 more eyes next to the Oreo you just “glued” on, place them in a row, right next to each other. Repeat with remaining eyes and Oreos. Set on wax paper to set.

Buttercream Frosting

  • In a large bowl cream together butter and vanilla. Slowly blend in the sugar, one cup at a time beating well after each addition.  I love using my Kitchenaid mixer for this! Beat in the milk and continue mixing until light and fluffy. You may need to add more sugar or milk until you find the right consistency, this varies every time I do the recipe.
  • Mix in green food coloring until you reach the desired color. If you are not going to use the frosting right away keep covered until you are ready to do so. Stir in the vanilla bean seeds just before using. 
  • Pipe frosting using piping bag or Ziploc bag with corner cut off) on the bottom of one Oreo (not covered in chocolate side), go around the edge of the cookie two times, so that the cookie has 2 layers of frosting. Then top the frosting with another Oreo, bottom side directly on the frosting, while making sure that the eyes line up. Slightly push the Oreos together, to make sure that they hold together.
  • Look at pictures above recipe card if you need help with decorating. Place on wax paper, and repeat with remaining Oreos and frosting.
  • Cut Twizzlers into strips, 6 for each spider. Insert into the frosting, 3 on each side.
  • Let them set, then serve and enjoy! They can be wrapped individually to give as a treat.
