Dark Chocolate & Pistachio Cookie Bars
Dark Chocolate & Pistachio Cookie Bars are soft dark chocolate and pistachio cookie bars. These make a great salty and sweet treat!
Servings: 24 bars
- 2 1/4 cups dark brown sugar packed
- 3/4 cup butter softened
- 1 tablespoon vanilla
- 2 eggs
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 cup shelled pistachios
- 1 cup dark chocolate chips
- 1/2 teaspoon coarse sea salt optional
Heat oven to 350°F. Grease bottom and sides of 13x9-inch pan with shortening or cooking spray.
In large bowl, beat dark brown sugar, butter, vanilla, and eggs with electric mixer on medium speed, or mix with a spoon. Stir in flour and baking powder until well blended. Stir in pistachios and 1 cup dark chocolate chips. Spread in pan.
Bake 20-25 minutes or until golden brown and center is set. Cool completely, about 1 hour. Drizzle with melted chips and caramel sauce. Let stand until set. For bars, cut into 6 rows by 6 rows.
