Ingredients
1/2poundFarfalle pastaboiled to al dente and drained
1poundbonelessskinless chicken breast, sautéed or grilled, cut into ½ inch cubes
3tablespoonsolive oil
3garlic clovesfinely chopped or put through garlic presser
1/2red bell peppersliced
1/2green bell peppersliced
1/2yellow bell peppersliced
1/2purple onionsliced
6tablespoonsbutter
3tablespoonsflour
1can14.5 ounces chicken broth
1/2cuphalf-and-half
2-3teaspoonsCajun seasoning*recipe below
1/2cupgrated parmesan
1/3cupshredded Asiago cheese

2 1/2teaspoonssalt
1tablespoonoregano
1tablespoonpaprika
1tablespooncayenne pepper

Instructions
Heat oven to 350. Lightly spray baking dish with cooking spray, I use an oval one, but you can use a 9x9 square too.
Cook pasta as directed and drain.
In a large saucepan heat 3 tablespoons of olive oil, add the onion, garlic, red, green and yellow peppers and sauté until they are slightly tender. Remove from pan and set aside.
Using the same pan, melt butter in a saucepan over medium heat. Stir in flour. Gradually stir in broth. Heat to boiling, stirring constantly; remove from heat. Stir in half-and-half, Cajun seasoning, 1/2 cup of parmesan, chicken, and pepper mixture.
Add pasta to chicken mixture; toss gently to mix well. Spoon into baking dish. Sprinkle with cheese. Bake uncovered about 20-30 minutes or until cheese is melted and warm in the center.
