Ingredients
Barbeque Chicken
1 1/2poundsboneless skinless chicken thighs(use dark meat here for most flavor!)
1tablespoonolive oil
1cupketchup
1/4cupdark brown sugar
1tablespoonWorcestershire sauce
1tablespooncider vinegar
1tablespoonyellow mustard
1teaspoonground red pepper
1/2teaspoongarlic salt
Healthy Poppy Seed Cole Slaw
8cupsred cabbageshredded
2/3cupvanilla honey Greek yogurt
1/2cupsdried cranberries
1/2cuppepitaspumpkin seeds
2teaspoonpoppy seeds
salt and white pepper to taste
Instructions
Barbeque Chicken
Brown chicken for four minutes on each side to sear in 1 tablespoon of hot oil in a large skillet over med-high heat. Remove from heat and place in a slow cooker.
Combine remaining ingredients. Pour over chicken.
Cover and cook on high for one hour. Reduce heat to low, and cook five to six hours.
Remove chicken from sauce and then shred it into a large bowl, using your hands. Stir shredded chicken into the sauce. Spoon mixture onto buns, serve over a salad, or coleslaw.

In a large bowl mix together all the ingredients and chill in the refrigerator until ready to serve.
