1tablespoonolive oil
2poundssteak of your choicecut into cubes
salt and pepper to taste
15ouncesred enchilada sauce
1cupsour cream
10.5ouncescream of chicken
1/2teaspooncumin
1teaspoonchili powder
10.25ouncesFritos chipsabout 6 cups
1 3/4cupshredded Mexican blend cheese
3/4cupshredded cheddar cheese
1/2head of lettucechopped, for topping
1roma tomatochopped, for topping
Instructions
Preheat oven to 350°F.
In a medium skillet heat olive oil on high heat. Add cubed steak, season with salt and pepper. Cook until pieces are slightly seared and cooked to your preference.
In a medium bowl mix together enchilada sauce, sour cream, cream of chicken, cumin, chili powder, 3/4 cup Mexican blend cheese, 3/4 cup cheddar cheese, and steak. Stir together until well combined.
In a 9x13" pan, pour Frito chips in the bottom, add steak mixture on top of the chips, and then sprinkle remaining 1 cup cheese on top. Bake uncovered for 20-25 minutes or until warm and bubbly and cheese is melted on top.
