Ingredients
1yellow onion
2tablespoonsbutterunsalted
salt & pepperto taste
2tablespoonsolive oil
2lbsboneless, skinless chicken breast
1packetfrench onion soup mix
1cancream of mushroom
1cupbeef broth
2 cupsshredded mozzarella cheese
Instructions
Over medium-high heat, in a large skillet melt the butter and add the sliced onions. Season with salt and pepper to taste.
Cook the onions for 2-3 minutes, then add the olive oil and chicken. Add the french onion soup pack to coat the chicken. Continue cooking until the chicken is no longer pink in the center, stirring occasionally.
Whisk together the cream of mushroom soup and beef broth. Once the chicken is just barely cooked all the way through, about 5-6 minutes, add the broth and soup mixture.
Bring to a boil, then reduce the heat and simmer for 4-6 minutes.
Turn off the heat and top with shredded cheese, cover, and let it sit for minutes or until the cheese has completely melted.
Lastly, remove the lid, top with fresh parsley, and serve.
