HOW TO MAKE COWBOY COOKIES

INGREDIENTS NEED TO MAKE COWBOY COOKIES

– Quick Oats – Rolled Oats – Coconut – Butterscotch or chocolate chips (or both!) – Chopped Pecans (I used finely chopped) – Cinnamon – Flour – Eggs – Brown sugar – Sugar – Baking Soda – Salt – Butter – Vanilla extract

– Preheat oven to 325°F (175 degrees C). – Mix flour, baking powder, baking soda, and salt in a bowl and set aside.

STEP 1

– In a separate bowl or stand mixer, cream together butter, white sugar, and brown sugar until light and fluffy. Then, beat in eggs one at a time and add vanilla, stirring until combined.

STEP 2

– Add rolled oats and quick oats until well combined. Then add coconut, pecans, and butterscotch chips (or chocolate chips), stirring until just combined.

STEP 3

– Using a cookie scoop or spoon, drop by teaspoonfuls onto greased baking sheets. – Bake at 325 for 11 – 13 minutes. Don't forget to let the cookies cool for 5 minutes before transferring them from the baking sheet.
