How to Make Cowboy Cookies

These cookies are a breeze to make! Mix the dry ingredients – flour, baking soda, baking powder, cinnamon, and salt. Then, cream the sugars and butter and combine everything, including the rolled oats, quick oats, coconut, pecans, and chocolate or butterscotch chips. The result? It’s a delightful treat that’s easy to whip up!

Why does this recipe use both quick oats and rolled oats?

Using both quick oats and rolled oats gives cowboy cookies a perfect texture. Rolled oats add chewiness, while quick oats give the dough the right amount of moisture.

Combining these two types of oats also allows for a more even distribution throughout the cookie, adding delicious texture and flavor to every bite.

Cowboy Cookies Baking Tips

  • Storing: To keep Cowboy Cookies fresh, store them in an airtight container for 4-5 days after cooling. For extra softness, add a slice of white bread.
  • Freezing the cookies! Keep your baked cookies fresh by freezing them individually wrapped in sandwich bags, and store them in a freezer Ziploc. This easy method preserves their deliciousness for up to 3 months.
  • Mix it up! Replace the butterscotch chips with white chocolate, chocolate, or peanut butter chips. You can even use candy like Reeces Pieces, M&M’s or chopped-up Reeces Peanut Butter Cups.
