This easy-to-make Panera copycat recipe for lemon white chocolate cookies is incredibly delicious and will become a favorite in no time.

Ingredients

  • 3 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 sticks salted butter = 1 cup
  • 1 cup brown sugar
  • 3/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 1/2 teaspoons lemon extract I used lemon paste 2 teaspoons
  • 1 lemon zested
  • 2 eggs
  • 1 1/2 cups white chocolate chips

Instructions

  • Preheat oven to 350 degrees.
  • Whisk together flour, salt, and baking soda in a medium bowl and then set aside.
  • Using an electric mixer, such as a KitchenAid, cream the butter and sugars until they become light and fluffy.
  • Add vanilla extract, lemon extract, lemon zest, and eggs.
  • Add the flour mixture to the batter and mix until well combined.
  • Stir in white chocolate chips.
  • Using a cookie scoop, portion the dough into golf ball-sized balls and place them onto a baking sheet lined with parchment paper. Bake for 10 minutes or until the edges start to turn golden brown.
