These molten lava cookies are way easier to make than lava cake, and in just 30 minutes, you’ll end up with 12 gooey, chocolatey treats.

Ingredients

  • 1 cup butter softened
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 2 eggs at room temperature
  • 2 cups flour
  • 3/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 12 dark chocolate truffles

Instructions

  • Preheat oven to 350 degrees F (176 C).
  • Cream butter and sugar until well combined; 1-2 minutes.
  • Add eggs and extracts and beat until light and fluffy; 1-2 minutes.
  • In a small mixing bowl, combine flour, salt, cocoa powder, baking soda, and powder, and stir together. Add to the batter and mix until well combined.
  • Scoop the dough into a 1/4-cup cookie dough scooper, or use an ice cream scooper if you don’t have one. Stuff the chocolate truffle into the cookie dough and roll the dough around the truffle, ensuring it is completely covered.

  • Arrange the dough onto two baking pans lined with parchment paper to prevent sticking, placing 6 evenly spaced scoops on each baking sheet to allow room for spreading.
  • Bake in preheated oven for 13-14 minutes. Remove from oven and sprinkle with coarse sea salt.
