Easy Breakfast Casserole
This Easy Breakfast Casserole is a simple, easy and delicious morning breakfast casserole made with eggs, green chiles, and lots of cheese.
- 12 eggs whisked
- 1/2 cup butter or margarine
- 1/2 cup flour
- 4-8 ounces green chiles
- 16 ounces cottage cheese small curd 1-2%
- 1 1/2 - 2 cups Monterrey jack cheese shredded
- fresh diced tomatoes
- sour cream
- chopped green or red peppers
- ham or sausage
Preheat oven to 400 degrees.
Prepare 9x13 baking pan by greasing all sides and bottom of the pan; set aside.
In a medium mixing bowl, whisk eggs. Add melted butter, flour, green chilies, cottage cheese, and Monterrey jack cheese. Stir until well combined.
Pour into prepared pan. Bake at 400 degrees for 15 minutes, then reduce oven temperature to 350 and bake for another 30-35 minutes.
Remove from oven, cool for 3-5 minutes and serve with optional toppings.
