Ingredients

Breakfast Casserole

  • 12 eggs whisked
  • 1/2 cup butter or margarine
  • 1/2 cup flour
  • 4-8 ounces green chiles
  • 16 ounces cottage cheese small curd 1-2%
  • 1 1/2 - 2 cups Monterrey jack cheese shredded

Optional Toppings

  • fresh diced tomatoes
  • salsa
  • guacamole
  • sour cream
  • cheese
  • chives

Add-in Ideas

  • chopped green or red peppers
  • ham or sausage
  • tomatoes
  • spinach

Instructions

  • Preheat oven to 400 degrees.
  • Prepare 9x13 baking pan by greasing all sides and bottom of the pan; set aside.
  • In a medium mixing bowl, whisk eggs. Add melted butter, flour, green chilies, cottage cheese, and Monterrey jack cheese. Stir until well combined.
  • Pour into prepared pan. Bake at 400 degrees for 15 minutes, then reduce oven temperature to 350 and bake for another 30-35 minutes. 
  • Remove from oven, cool for 3-5 minutes and serve with optional toppings.
