1cupsrolled oats
1 1/2cupsquick oats
1 1/2cupsbutterscotch chips
3/4cupcoconut
1/2cupfinely chopped pecans
Instructions
Preheat oven to 325°F (175 degrees C).
Mix flour, baking powder, baking soda, and salt in a bowl and set aside.
In a separate bowl or stand mixer, cream together butter, white sugar, and brown sugar until light and fluffy. Then, beat in eggs one at a time and add vanilla, stirring until combined.
Add rolled oats and quick oats until well combined. Then add coconut, pecans, and butterscotch chips (or chocolate chips), stirring until just combined.
Using a cookie scoop or spoon, drop by teaspoonfuls onto greased baking sheets.
Bake at 325 for 11 – 13 minutes. Don't forget to let the cookies cool for 5 minutes before transferring them from the baking sheet. Enjoy!
