Cowboy cookies are deliciously versatile treats, packed with oatmeal, cinnamon, pecans, coconut, and butterscotch chips. Customize them with your favorite mix-ins like chocolate chips or toasted pecans, or go all out and combine them all for a flavor-packed delight!

Ingredients

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1 cup butter
  • 1 cup brown sugar
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cups rolled oats
  • 1 1/2 cups quick oats
  • 1 1/2 cups butterscotch chips
  • 3/4 cup coconut
  • 1/2 cup finely chopped pecans

Instructions

  • Preheat oven to 325°F (175 degrees C).
  • Mix flour, baking powder, baking soda, and salt in a bowl and set aside.
  • In a separate bowl or stand mixer, cream together butter, white sugar, and brown sugar until light and fluffy. Then, beat in eggs one at a time and add vanilla, stirring until combined.
  • Add rolled oats and quick oats until well combined. Then add coconut, pecans, and butterscotch chips (or chocolate chips), stirring until just combined.
  • Using a cookie scoop or spoon, drop by teaspoonfuls onto greased baking sheets.
  • Bake at 325 for 11 – 13 minutes. Don't forget to let the cookies cool for 5 minutes before transferring them from the baking sheet. Enjoy!
