Ingredients

  • 3 1/2 cups chopped pecans Using about 1 1/3 cups for the actual clusters.
  • 1 tablespoon heavy cream
  • 12 ounces caramel candies
  • 1/2 cup Dark Chocolate melting chips

Instructions

  • Unwrap the caramel candies and place them in a medium glass mixing bowl; add heavy cream.
  • Microwave caramels and heavy cream in 20-second intervals, stirring in between, until completely melted and combined.
  • Drizzle small amounts of caramel over clusters of pecans using a spoon, making sure all the nuts get their fair share.
  • Let it set for a few minutes. Melt the chocolate in the microwave, stirring every 30 seconds, until smooth and fully melted.
  • To coat the candies, pour melted chocolate over them, distributing it evenly across all clusters. You can use a spoon or a piping bag to pipe the chocolate over the pecans. Add Christmas sprinkles or coarse sea salt on top of the chocolate.
  • Let the candies chill until the chocolate and caramel are set and dry. If you're in a hurry, pop them in the fridge for faster results.
