Heavy Cream โ Make sure you DO NOT substitute the heavy cream with any other product.
Caramels – Now, I feel like it goes with out saying, but please unwrap your caramel before melting them in the microwave. I have had a reader not follow these instructions on another recipe.
Pecans – I love using roughly chopped pecans, but you can easily use whole or halved pecans as well. Additionally, if you want to roast the pecans before hand, that is just another delicious way to prepare the recipe.
Chocolate – I prefer Ghiradelli’s Dark Chocolate Melting Chips, you can easily sub this with you preference milk, semi-sweet or even white chocolate.
Sprinkles and coarse sea salt make a great topper.

Pecan Caramel Clusters
Ingredients
- 3 1/2 cups chopped pecans Using about 1 1/3 cups for the actual clusters.
- 1 tablespoon heavy cream
- 12 ounces caramel candies
- 1/2 cup Dark Chocolate melting chips
Instructions
- Unwrap the caramel candies and place them in a medium glass mixing bowl; add heavy cream.
- Microwave caramels and heavy cream in 20-second intervals, stirring in between, until completely melted and combined.
- Drizzle small amounts of caramel over clusters of pecans using a spoon, making sure all the nuts get their fair share.
- Let it set for a few minutes. Melt the chocolate in the microwave, stirring every 30 seconds, until smooth and fully melted.
- To coat the candies, pour melted chocolate over them, distributing it evenly across all clusters. You can use a spoon or a piping bag to pipe the chocolate over the pecans. Add Christmas sprinkles or coarse sea salt on top of the chocolate.
- Let the candies chill until the chocolate and caramel are set and dry. If you're in a hurry, pop them in the fridge for faster results.
