  • 2 tablespoons taco seasoning
  • 1/4 teaspoon onion powder

  • 24 ounces medium salsa
  • 2 lbs boneless, skinless chicken breast
  • 1/4 cup olive oil
  • 2 cups cheddar cheese

  • Cook chicken until it is no longer pink in the center.
  • Add the salsa to the pan. Bring to a boil over medium-high heat. Reduce the temperature and simmer for 5-10 minutes, or until heated through and the chicken has a nice glaze.
  • Top with shredded cheese, return to heat, cover, and turn off the heat. Let it set for about 6-10 minutes until the cheese has completely melted. Remove from the stovetop and immediately serve.
