We love Mexican food. In fact, we have it at least once to twice a week. This recipe taste so fresh! The citric acid of the lime, the bite onion and sweetness avocado paired with the cayenne pepper makes this makes a killer combination.

How do you make Cayenne Spiced Rubbed Chicken with Avocado Salsa?

  • In a small bowl, combine 1 teaspoon salt, 1/4 teaspoon pepper, and cayenne, rub all over the chicken.
  • In large skillet, heat oil over medium heat. Add chicken, and cook until browned on the outside and opaque throughout 8-10 minutes per side.
  • Meanwhile, in a medium bowl, combine onion and lime juice; set aside. Just before serving, fold in avocado chunks into onion mixture; season with salt and pepper. Serve chicken topped with salsa.

MIXING BOWLS: I love having a variety of sizes of mixing bowls. From small to large, I find that having at least 3 bowls of different sizes has been essential in my kitchen. I prefer Pyrex because of the durability.

KNIVES: A good set of kitchen knives is essential for preparing any meal. I just recently invested in some Cutco knives and I have not regretted it one bit. These are hands down my favorite knives I have owned.

CUTTING BOARD: For me, this is a kitchen must-have and kitchen counter saver. While we have countertops you can cut on, I find that this extra step will preserve my counter. I also find that using a cutting board makes for less clean up afterward. I love this cutting board because it has a groove all the way around the board prevent juices from running all of the counters.

Ingredients
 

  • coarse salt and ground pepper
  • 1/4 teaspoon cayenne pepper
  • 4-6 boneless chicken thighs
  • 2 tablespoons olive oil
  • 1 medium red onion finely diced
  • 2 tablespoons fresh lime juice
  • 2 avocados pitted and cut into chunks

Instructions
 

  • In a small bowl, combine 1 teaspoon salt, 1/4 teaspoon pepper, and cayenne, rub all over the chicken.
  • In large skillet, heat oil over medium heat. Add chicken, and cook until browned on the outside and opaque throughout 8-10 minutes per side.

Note: if you are not a big onion fan, I would cut down the amount of onion, otherwise it may be overpowering for you.

My review: I love this meal. It tastes fresh. I think it is the combination of the lime, onion, and avocado paired with the cayenne pepper. I love that it uses coarse salt, I would highly recommend this. If you don’t have coarse salt then use ½ the amount of salt or it may taste too salty. Perfect served with homemade corn or whole wheat tortillas.

Kid’s reviews: Quote from Jordan, my 8-year-old daughter, “Mom, at first I thought this was normal chicken. Then I took a bite and all of the sudden the chicken exploded in my mouth. All the seasonings just came out into my mouth and I loved it. Actually, I more than loved it…” Enough said.
