I never really was a fan of brussel sprouts until I made this recipe. I guess you can throw bacon on anything and it will taste good. The truth is, I am not even a huge fan of bacon but paired with brussel sprouts, yum! This is a salty side that will go well with any sweet meat dish.

How do you make Bacon and Walnut Brussel Sprouts?

  • In a small bowl, whisk together vinegar, sugar, and oil; set aside.
  • In a large skillet, cook bacon until crisp. Remove bacon, cut or crumble into pieces, and set aside. Pour off all but 2 tablespoons of drippings in pan (if there aren’t enough drippings to equal 2 tbsp, add a little butter or oil).
  • Heat drippings over medium-high then add shredded Brussel sprouts. Cook, stirring constantly, for 3 to 5 minutes, or until just tender. Remove from heat and stir in bacon, walnuts, and dressing. Season with salt and pepper to taste. Serve warm.

Ingredients
 

  • 2 tablespoons apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon walnut oil or oil of your choice
  • 4 slices thick cut bacon
  • 1 pound brussel sprouts trimmed and shredded (you can use the shredding blade on a food processor)
  • 1/2 cup toasted chopped walnuts
  • kosher salt to taste
  • fresh ground black pepper to taste

Kids review: Well, Aiden and Jersey liked them. In fact, Aiden loved them! And well, Jersey loved the bacon. Madden and Jordan took about an hour, literally an hour, to eat them. Yes, I am one of those Moms! You know, I grew up on “no thank you” helpings and I survived and so will they. I usually just make them try it, but tonight they made a deal with Dad that if they ate all of their helping they got to watch a little bit of a movie with him and Aiden. An hour later, Madden finished and got to watch 3 minutes, sigh. Next time guaranteed he won’t wait an hour.
