Since my wife started this food blog 2.5 years ago, I‘ve gotten kicked out of the kitchen more than I can count, been snapped at (fired really) for not holding plates level, had a spatula literally ripped out of my grasp mid stir, and lost all sense of self-control when it comes to Sandra’s lifeblood – sugar.

I used to never eat desserts. I was the guy that wanted the extra 12 ounces of ribeye and perhaps that side rack of dry-rubbed ribs instead of the triple chocolate-covered chocolate smothered in chocolate. But now, I actually know what ganache means, that percents on chocolates do impact taste, and that when a recipe calls for baking powder, you can’t just leave it out.

I need to gain a bit of my manliness back.

So this Super Bowl season, I’m adding “A Dash of Manity” to A Dash of Sanity. And what better way to do it than with Black and Blue Chicken Wings. I’ve always loved black and blue cheeseburgers and can put down about 48 wings in a given sitting, so why not combine the two. With crumbled blue cheese and three kinds of garlic, this isn’t a wing for the weak. They’re lightly fried in salt and cracked pepper and tossed in a homemade blue cheese balsamic vinaigrette.

Inspired by an orange (Sanity) versus blue (Manity) battle of the wings, I want you to try these and let me know what you think. I’ve lost all but one foodie battle I’ve engaged in with my wife, but I’m hoping these will crush hers. In a couple of days, look for her orange team recipe and try them both during this year’s championship.

Like our Super Bowl underdog Denver Broncos trying to upset the clear favorite, I hope these wings steal the win, sending me off into a slightly bluer sunset. Although we all really know that there is no way to win when you beat your blogger wife on her home field.

How do you make Black and Blue Chicken Wings?

Mix all of the dry ingredients for the wings together in a bowl. Toss the chicken wings into the dry mixture until they are lightly coated. Heat 2 inches of oil in a heavy bottom pot with high sides until it reaches 375 degrees. Fry the wings for 8-10 minutes.

While the wings are frying, make your sauce in a different bowl large enough to hold all the wings. Combine all remaining ingredients to make the vinaigrette, setting 1 tablespoon blue cheese and parsley aside to use for later.

Whisk or blend the vinaigrette thoroughly (I used our Blendtec to really emulsify the ingredients, but a whisk will do as long as you stir it well right before coating the wings).

Remove wings from oil once completely cooked, and set on a paper towel to absorb oil drippings. Add wings to sauce and toss to coat. There may be some unused sauce left over in the bowl after coating the wings. Top with remaining blue cheese and parsley, and serve immediately.

Ingredients
 

Sauce

  • 3 tablespoons olive oil
  • 3 tablespoons garlic infused olive oil
  • 1 teaspoon balsamic vinegar
  • 1 small clove garlic finely minced
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon granulated garlic
  • 3-4 tablespoons blue cheese crumbled
  • 3/4 teaspoon lemon juice fresh squeezed
  • 1/2 teaspoon freshly cracked black pepper
  • 1 pinch dried parsley

Wings

  • 1 pound chicken wings
  • oil for frying
  • 1 teaspoon granulated garlic
  • 1 tablespoon cracked pepper or coarse ground pepper
  • 1/4 cup flour
  • 1/4 teaspoon onion powder
  • salt to taste
  • 1/2 teaspoon cayenne pepper optional for more heat

  1. LOVE this “Dash of Manity!! And while my boys were in Denver to watch our beloved team get romped, I hope that isn’t the same with the outcome of this match. I wish you both the best of luck and think I’ll have to get into the neutral zone. These look pretty fierce, but I certainly know that Sandra’s not one to be messed with in the kitchen.
